Ingredients:

  • 1 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 cup peanut butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3 cups rolled oats
  • 1 cup chocolate chips
  • 1 cup M&Ms
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract (for icing)
  • 1 cup colorful sprinkles

Instructions:

  1. Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
  2. In a large bowl, cream together the softened butter, brown sugar, granulated sugar, and peanut butter until smooth.
  3. Beat in the eggs, one at a time, and then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the rolled oats, chocolate chips, and M&Ms until evenly distributed.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10-12 minutes or until the edges are lightly golden. Remove from the oven and let cool on the baking sheets for a few minutes before transferring to wire racks to cool completely.
  9. While the cookies are cooling, prepare the icing by mixing the powdered sugar, milk, and vanilla extract in a bowl until smooth.
  10. Once the cookies are cool, spread a generous amount of icing on the bottom of one cookie and top it with another cookie to form a sandwich.
  11. Roll the edges of the sandwich in colorful sprinkles to coat.
  12. Serve immediately or store in an airtight container for up to a week.
