Ingredients:

  • 0.25 cup almond flour
  • 0.75 cup coconut flour
  • 3 egg whites
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 tablespoon lemon zest
  • 1/4 cup monk fruit sweetener
  • 1/4 teaspoon baking powder
  • Pinch of salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond flour, coconut flour, baking powder, and salt.
  3. In another bowl, whisk together the egg whites, vanilla extract, almond extract, monk fruit sweetener, and lemon zest until well combined.
  4. Gradually add the wet ingredients to the dry ingredients, mixing until a dough forms.
  5. Using a tablespoon, scoop out portions of the dough and roll them into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
  6. Flatten each ball slightly with the back of a fork or your fingers.
  7. Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden.
  8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
