Ingredients:

  • 1 cup almond paste
  • 2 egg whites
  • 1/2 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • Pinch of salt

Instructions:

  1. Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the almond paste, egg whites, sugar, vanilla extract, almond extract, and salt.
  3. Using an electric mixer, beat the mixture on medium speed until it becomes smooth and glossy, and stiff peaks form.
  4. Spoon or pipe the meringue mixture onto the prepared baking sheet, spacing them about an inch apart.
  5. Bake in the preheated oven for 25-30 minutes, or until the cookies are firm to the touch and lightly golden.
  6. Turn off the oven and leave the cookies inside to cool completely for about an hour.
  7. Once cooled, carefully remove the cookies from the parchment paper and enjoy!
