Ingredients:

  • ½ cup (113g) butter, softened
  • 1 cup (200g) granulated sugar
  • ½ cup (123g) whole milk, room temperature
  • 1 teaspoon vanilla extract
  • ¼ teaspoon pure almond extract, optional
  • 1½ cups (180g) cake flour
  • 2 teaspoons baking powder
  • 4 large (120g or 4 ounces) egg whites, room temperature

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the whole milk, vanilla extract, and almond extract (if using), mixing until well combined.
  4. In a separate bowl, whisk together the cake flour and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. In another bowl, whip the egg whites until soft peaks form. Gently fold the egg whites into the cake batter, being careful not to deflate them.
