Ingredients:

  • 4 medium-sized potatoes
  • 2 tablespoons mustard oil
  • 2 green chilies, finely chopped
  • 1 teaspoon garlic, minced
  • 1/4 cup fresh cilantro, chopped
  • 1 tablespoon lemon juice
  • Salt to taste
  • 1/4 cup plain yogurt (optional)

Instructions:

  1. Peel the potatoes and cut them into quarters. Boil them in salted water until tender, about 15-20 minutes.
  2. Drain the potatoes and let them cool slightly before mashing them in a large bowl.
  3. In a small pan, heat the mustard oil over medium heat. Add the minced garlic and chopped green chilies, sautéing for a minute until fragrant.
  4. Pour the mustard oil mixture over the mashed potatoes and mix well.
  5. Add the chopped cilantro, lemon juice, and salt to taste. Mix until fully incorporated.
  6. If using, fold in the yogurt for creaminess.
  7. Serve the Alo Vorta warm or at room temperature as a side dish.
