Ingredients:

  • 500 g baby potatoes, boiled and peeled
  • 2 tablespoons vegetable oil
  • 1 teaspoon cumin seeds
  • 1 large onion, finely chopped
  • 2 teaspoons ginger-garlic paste
  • 2 green chilies, slit
  • 1 teaspoon turmeric powder
  • 1 tablespoon coriander powder
  • 1 tablespoon garam masala
  • 1 cup coconut milk
  • 1 tablespoon tamarind paste
  • Salt to taste
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Heat the vegetable oil in a deep pan over medium heat. Add cumin seeds and let them sizzle.
  2. Add the chopped onions and sauté until golden brown.
  3. Stir in the ginger-garlic paste and green chilies; cook for 1-2 minutes until fragrant.
  4. Add turmeric powder, coriander powder, and salt, mixing well for another minute.
  5. Add the boiled potatoes and gently toss to coat them in the spice mixture.
  6. Pour in the coconut milk and tamarind paste, stirring to combine. Bring to a simmer.
  7. Cover the pan and let it cook on low heat for about 15 minutes, allowing the flavors to meld.
  8. Sprinkle garam masala over the top before serving and garnish with fresh cilantro.
