Ingredients:

  • 1 cup rolled oats
  • 1 cup desiccated coconut
  • 1 cup all-purpose flour
  • 1 cup brown sugar
  • 1/2 cup unsalted butter
  • 1/2 cup golden syrup
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips

Instructions:

  1. Preheat your oven to 160°C (320°F) and line a baking tray with parchment paper.
  2. In a large bowl, combine the rolled oats, desiccated coconut, all-purpose flour, brown sugar, and salt.
  3. In a small saucepan, melt the unsalted butter and golden syrup over low heat, stirring until combined.
  4. Dissolve the baking soda in 1 tablespoon of hot water and add it to the butter mixture, stirring well.
  5. Pour the melted mixture into the dry ingredients and mix until fully combined.
  6. Fold in the dark chocolate chips.
  7. Scoop tablespoon-sized portions of the mixture onto the prepared baking tray, leaving space between each as they will spread.
  8. Bake in the preheated oven for 10-12 minutes, or until golden brown.
  9. Allow to cool on the tray for a few minutes before transferring to a wire rack to cool completely.
