Ingredients:

  • 2 cups of diced apples (preferably a mix of sweet and tart varieties)
  • 1 can (15 oz) chickpeas, drained and rinsed
  • 1 can (14 oz) coconut milk
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • Salt and pepper to taste
  • 1 cup cooked quinoa or rice
  • 1 tablespoon olive oil
  • Fresh cilantro for garnish

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another minute until fragrant.
  4. Stir in the curry powder, cumin, turmeric, and cinnamon, cooking for an additional minute to toast the spices.
  5. In a large mixing bowl, combine the diced apples, chickpeas, cooked quinoa or rice, and the sautéed onion and spice mixture.
  6. Pour in the coconut milk and mix well. Season with salt and pepper to taste.
  7. Transfer the mixture to a greased casserole dish and spread it out evenly.
  8. Cover with foil and bake in the preheated oven for 25 minutes.
  9. Remove the foil and bake for an additional 15 minutes, until the top is slightly golden and the apples are tender.
  10. Garnish with fresh cilantro before serving.
