Ingredients:

  • 2 tablespoons olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon turmeric
  • 1/2 teaspoon cinnamon
  • 1 large carrot, diced
  • 1 bell pepper, diced
  • 2 medium apples, peeled, cored, and diced
  • 1 can (14 oz) coconut milk
  • 2 cups vegetable broth
  • 1 cup green peas (fresh or frozen)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Stir in the minced garlic and grated ginger, cooking for an additional minute until fragrant.
  3. Add the curry powder, ground cumin, turmeric, and cinnamon. Stir well to coat the onions and garlic in the spices.
  4. Incorporate the diced carrot and bell pepper, cooking for another 5 minutes until they begin to soften.
  5. Add the diced apples, coconut milk, and vegetable broth. Bring to a simmer and cook for 15-20 minutes until the vegetables are tender.
  6. Stir in the green peas and cook for an additional 5 minutes. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh cilantro.
