Ingredients:

  • 8 oz elbow macaroni
  • 2 cups sharp cheddar cheese, shredded
  • 1 cup Gruyère cheese, shredded
  • 2 cups milk
  • 1/4 cup unsalted butter
  • 1/4 cup all-purpose flour
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 tsp nutmeg
  • 1 large apple, thinly sliced (preferably a tart variety like Granny Smith)
  • 1/2 cup breadcrumbs
  • 2 tbsp olive oil
  • 1 tbsp fresh thyme, chopped

Instructions:

  1. Cook the elbow macaroni according to package instructions until al dente. Drain and set aside.
  2. In a large saucepan, melt the butter over medium heat. Stir in the flour and cook for about 1 minute until bubbly.
  3. Slowly whisk in the milk, stirring constantly until the mixture thickens. Add garlic powder, onion powder, salt, black pepper, and nutmeg.
  4. Remove from heat and stir in the cheddar and Gruyère cheese until melted and smooth.
  5. Fold in the cooked macaroni and apple slices until well combined.
  6. Preheat your grill to medium heat.
  7. Transfer the mac and cheese mixture to a greased grill-safe dish. In a small bowl, mix breadcrumbs with olive oil and thyme, then sprinkle evenly over the mac and cheese.
  8. Grill for about 15-20 minutes, or until the top is golden and crispy.
