Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut oil, melted
  • 2 tablespoons honey or maple syrup
  • 1/4 teaspoon salt
  • 1/2 cup dried apricots, chopped
  • 1/4 cup orange juice
  • 1 tablespoon orange zest
  • 2 large eggs
  • 1/4 teaspoon vanilla extract
  • 1/4 teaspoon baking powder
  • 1/4 cup sliced almonds for topping

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, melted coconut oil, honey (or maple syrup), and salt. Mix until a dough forms.
  3. Press the dough into a 9-inch tart pan evenly across the bottom and up the sides. Prick the bottom with a fork to prevent bubbling.
  4. In another bowl, combine the chopped dried apricots, orange juice, orange zest, eggs, vanilla extract, and baking powder. Mix well until combined.
  5. Pour the apricot mixture into the prepared crust, spreading it evenly.
  6. Sprinkle the sliced almonds on top of the filling.
  7. Bake for 25-30 minutes, or until the tart is set and lightly golden on top.
  8. Allow to cool before slicing. Serve warm or at room temperature.
