Ingredients:

  • 1 pound shrimp, peeled and deveined
  • 2 medium potatoes, diced
  • 1 bell pepper, sliced
  • 1 cup snap peas
  • 3 green onions, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon vegetable oil
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions:

  1. In a large pot, boil the diced potatoes until tender, about 10 minutes. Drain and set aside.
  2. Heat vegetable oil in a large skillet or wok over medium-high heat.
  3. Add minced garlic and ginger, sauté for 30 seconds until fragrant.
  4. Add the shrimp to the skillet and cook until they turn pink, about 3-4 minutes. Remove and set aside.
  5. In the same skillet, add the bell pepper and snap peas, stir-frying for 2-3 minutes until just tender.
  6. Return the potatoes to the skillet along with the shrimp, soy sauce, oyster sauce, and sesame oil. Stir to combine and heat through.
  7. Season with salt and pepper to taste, and garnish with chopped green onions and sesame seeds before serving.
