Ingredients:

  • 500 g ground lamb
  • 1 medium onion, finely grated
  • 3 cloves garlic, minced
  • 1 tablespoon red pepper flakes
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh mint, chopped
  • 2 tablespoons olive oil
  • 4 pita breads
  • 1 cup chopped fresh parsley for salad
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions:

  1. In a large mixing bowl, combine the ground lamb, grated onion, minced garlic, red pepper flakes, cumin, paprika, black pepper, salt, parsley, mint, and olive oil. Mix well until all ingredients are thoroughly combined.
  2. Cover the mixture and let it rest in the refrigerator for at least 30 minutes to allow the flavors to meld.
  3. Preheat your grill to a high heat. While the grill is heating, shape the lamb mixture onto metal skewers, forming long, flat kebabs.
  4. Once the grill is ready, place the skewers on the grill and cook for about 4-5 minutes on each side, or until the kebabs are nicely browned and cooked through.
  5. Meanwhile, prepare the parsley salad by tossing chopped parsley with lemon juice, salt, and pepper in a bowl.
  6. Serve the kebabs hot with warm pita bread and the parsley salad on the side.
