Ingredients:

  • 2 slices of whole grain bread
  • 1 ripe avocado
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1/4 cup fresh basil leaves
  • 1 tablespoon nutritional yeast
  • 1 tablespoon lemon juice
  • 1 tablespoon pine nuts (or walnuts)
  • 1 clove of garlic

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. On a baking sheet, toss the cherry tomatoes with 1 tablespoon of olive oil, salt, and pepper. Roast in the oven for about 15-20 minutes until they are blistered and caramelized.
  3. While the tomatoes are roasting, prepare the basil pesto by blending the basil leaves, nutritional yeast, lemon juice, pine nuts, garlic, and remaining tablespoon of olive oil in a food processor until smooth. Adjust seasoning with salt and pepper to taste.
  4. Toast the slices of whole grain bread until golden brown.
  5. Slice the avocado in half, remove the pit, and scoop the flesh into a bowl. Mash it lightly with a fork and season with salt and pepper.
  6. Spread the mashed avocado generously on each slice of toasted bread.
  7. Top with roasted cherry tomatoes and drizzle with basil pesto.
  8. Serve immediately and enjoy your delicious, plant-based avocado toast!
