Ingredients:

  • 1 cup quinoa, rinsed
  • 2 cups water
  • 1/2 teaspoon salt
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup fresh cilantro, chopped
  • 1 jalapeño, seeded and minced
  • Juice of 2 limes
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions:

  1. In a medium saucepan, combine quinoa, water, and salt. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.
  2. Remove from heat and let it sit covered for 5 minutes. Fluff with a fork and let cool.
  3. In a large bowl, combine the cooled quinoa, cherry tomatoes, cucumber, red bell pepper, red onion, avocado, cilantro, and jalapeño.
  4. In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine. Adjust seasoning if necessary.
  6. Serve chilled or at room temperature.
