Ingredients:

  • 10 pounds ripe bananas, mashed
  • 3 cups vegetable oil
  • 27 large eggs
  • 3 tablespoons plus 1 teaspoon vanilla extract
  • 13 pounds all-purpose flour
  • 3/4 cups baking powder
  • 3 tablespoons baking soda
  • 1 tablespoon salt
  • 3 1/3 cups water
  • 2 tablespoons ground cinnamon
  • 1 teaspoon ground nutmeg

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed bananas, vegetable oil, eggs, and vanilla extract. Mix well until smooth.
  3. In a separate bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
