Ingredients:

  • 3 ripe bananas, mashed
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • Pinch of salt
  • 3/4 cup sugar
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 4 ounces cream cheese, softened
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon juice

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a mixing bowl, combine the mashed bananas and melted butter. Stir until well combined.
  3. Add the baking soda and salt to the banana mixture, then mix in the sugar, beaten egg, and vanilla extract.
  4. Gradually add the flour, mixing until just combined. Do not overmix.
  5. In another bowl, beat together the softened cream cheese, powdered sugar, and lemon juice until smooth.
  6. Pour half of the banana bread batter into the prepared loaf pan. Dollop half of the cream cheese mixture on top, then swirl with a knife. Repeat with the remaining batter and cream cheese mixture.
  7. Bake in the preheated oven for 60-65 minutes, or until a toothpick inserted into the center comes out clean.
  8. Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
