Ingredients:

  • 3 ripe bananas, mashed
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/3 cup melted butter
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1/2 cup chopped walnuts or pecans
  • 1/4 cup chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large mixing bowl, combine the mashed bananas, brown sugar, granulated sugar, and melted butter. Mix well until smooth.
  3. Stir in the beaten egg and vanilla extract until fully incorporated.
  4. In another bowl, whisk together the baking soda, salt, ground cinnamon, and all-purpose flour.
  5. Gradually fold the dry ingredients into the banana mixture until just combined. Do not overmix.
  6. Gently fold in the rolled oats, chopped nuts, and chocolate chips (if using).
  7. Pour the batter into the prepared loaf pan and smooth the top.
  8. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
