Ingredients:

  • 2 ripe bananas, mashed
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/3 cup melted butter (or coconut oil for a dairy-free option)
  • 1 large egg (or flax egg for vegan option)
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour (or gluten-free flour blend)
  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large mixing bowl, combine the mashed bananas, granulated sugar, brown sugar, and melted butter. Mix well.
  3. Add the egg and vanilla extract to the banana mixture and stir until combined.
  4. In a separate bowl, whisk together the baking soda, baking powder, salt, cinnamon, and flour.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  6. Fold in the chocolate chips gently.
