Ingredients:

  • 3 ripe bananas, mashed
  • 1/2 cup creamy peanut butter
  • 1/3 cup honey or maple syrup
  • 1/4 cup unsweetened applesauce
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 1/2 cups all-purpose flour
  • 1/2 cup chopped peanuts (optional)
  • 1/4 cup chocolate chips (optional)

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a 9x5 inch loaf pan.
  2. In a large bowl, mix together the mashed bananas, peanut butter, honey (or maple syrup), applesauce, eggs, and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, baking soda, salt, and cinnamon.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
  5. Fold in the chopped peanuts and chocolate chips if using.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Sprinkle a few extra chopped peanuts on top for garnish, if desired.
  8. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
  9. Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
