Ingredients:

  • 3 ripe bananas, sliced
  • 1 cup coconut milk
  • 1 cup heavy cream
  • 1/2 cup granulated sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup vanilla wafers
  • 1/4 cup unsweetened shredded coconut
  • 2 tablespoons butter
  • 1 tablespoon brown sugar

Instructions:

  1. In a medium saucepan, whisk together coconut milk, heavy cream, granulated sugar, cornstarch, vanilla extract, and salt over medium heat. Stir continuously until the mixture thickens and comes to a gentle boil.
  2. Remove the saucepan from heat and let it cool slightly.
  3. In a skillet, melt butter over medium heat. Add sliced bananas and brown sugar, cooking until the bananas are caramelized, about 3-4 minutes. Remove from heat.
  4. In a serving dish, layer half of the vanilla wafers at the bottom, followed by half of the banana slices, and half of the pudding mixture. Repeat the layers with the remaining wafers, bananas, and pudding.
  5. Top with shredded coconut, and chill in the refrigerator for at least 2 hours before serving to allow the flavors to meld.
