Ingredients:

  • 1 whole rabbit, cut into pieces
  • 1/4 cup olive oil
  • 1/4 cup apple cider vinegar
  • 2 tablespoons Dijon mustard
  • 2 tablespoons honey
  • 2 tablespoons smoked paprika
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon cayenne pepper (optional)
  • 1 cup BBQ sauce (homemade or store-bought)
  • Fresh parsley for garnish

Instructions:

  1. In a large bowl, combine olive oil, apple cider vinegar, Dijon mustard, honey, smoked paprika, garlic powder, onion powder, salt, black pepper, and cayenne pepper (if using). Mix well.
  2. Add the rabbit pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.
  3. Preheat your grill to medium heat. Remove the rabbit from the marinade, reserving the marinade for basting.
  4. Grill the rabbit pieces for about 15-20 minutes, turning occasionally and basting with the reserved marinade.
  5. During the last 5 minutes of grilling, brush the rabbit with BBQ sauce, allowing it to caramelize slightly.
