Ingredients:

  • 400g beef mince
  • 1 cup basmati rice
  • 2 cups fresh spinach, chopped
  • 1 bell pepper, diced (any color)
  • 2 spring onions, chopped
  • 2 shallots, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups water or beef broth

Instructions:

  1. Rinse the basmati rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  2. In a large pot, heat 1 tablespoon of olive oil over medium heat. Add the chopped shallots and minced garlic, sautéing until translucent.
  3. Add the beef mince to the pot, breaking it up with a spoon. Cook until browned, about 5-7 minutes.
  4. Stir in the cumin, paprika, salt, and pepper. Cook for an additional 2 minutes to allow the spices to infuse.
  5. Add the diced bell pepper and chopped spinach, cooking until the spinach wilts, about 3-4 minutes. Remove from heat and set aside.
  6. In another pot, heat the remaining tablespoon of olive oil. Drain the soaked rice and add it to the pot, stirring for 1-2 minutes to toast the rice slightly.
  7. Pour in 2 cups of water or beef broth, bring to a boil, then reduce to a simmer, cover, and cook for 15 minutes or until the rice is tender and the liquid is absorbed.
  8. Fluff the rice with a fork, then serve the beef and vegetable mixture over the rice, garnished with chopped spring onions.
