Ingredients:

  • 1 bunch beet greens, washed and chopped
  • 1 block firm tofu, drained and cubed
  • 2 tablespoons vegetable oil
  • 3 cloves garlic, minced
  • 1 inch ginger, minced
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Sesame seeds for garnish

Instructions:

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the cubed tofu and cook until golden brown on all sides, about 5-7 minutes. Remove and set aside.
  3. In the same skillet, add minced garlic and ginger, and sauté for about 1 minute until fragrant.
  4. Add the chopped beet greens and stir-fry for 3-5 minutes until wilted.
  5. Return the tofu to the skillet and pour in the soy sauce and sesame oil. Add red pepper flakes if using.
  6. Stir everything together and cook for an additional 2 minutes. Season with salt and pepper to taste.
  7. Serve hot, garnished with sesame seeds.
