  • 1 pie crust (store-bought or homemade)
  • 2 cups mixed berries (strawberries, blueberries, raspberries)
  • 1 cup granulated sugar, divided
  • 2 tablespoons cornstarch
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 3 large egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup vanilla bean ice cream
  • 1/2 cup milk
  • 1 teaspoon lemon zest

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and fit it into a 9-inch pie dish. Trim any excess crust and set aside.
  3. In a mixing bowl, combine the mixed berries, 1/2 cup of sugar, cornstarch, lemon juice, and vanilla extract. Stir gently to combine.
  4. Pour the berry mixture into the pie crust.
  5. Cut strips of pie crust to create a lattice top over the berry filling, weaving them together.
