Ingredients:

  • 2 cups cooked jasmine rice
  • 1 cup spinach, blanched
  • 1 cup bean sprouts, blanched
  • 1 cup carrots, julienned
  • 1 cup zucchini, julienned
  • 1 cup shiitake mushrooms, sliced
  • 1 cup ground beef (or tofu for a vegetarian option)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon sugar
  • 2 eggs
  • 2 tablespoons sesame seeds, toasted
  • 1 lime, zested
  • Salt and pepper to taste
  • Green onion for garnish

Instructions:

  1. In a skillet over medium heat, add sesame oil and sauté the ground beef until cooked through. Stir in soy sauce, gochujang, and sugar. Cook for another 2 minutes and set aside.
  2. In the same skillet, sauté the zucchini, carrots, and shiitake mushrooms until tender. Season with salt and pepper.
  3. To assemble, place a serving of jasmine rice in a bowl. Arrange the sautéed vegetables, blanched spinach, and bean sprouts on top of the rice.
  4. Add the cooked beef (or tofu) in the center, and top with a fried egg.
  5. Sprinkle toasted sesame seeds and lime zest over the top, and garnish with chopped green onions.
  6. Serve with additional gochujang on the side for those who prefer extra spice.
