Ingredients:

  • 1 cup brown rice
  • 2 cups vegetable broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 avocado
  • 2 tablespoons lime juice
  • 2 tablespoons olive oil
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. In a medium pot, combine brown rice and vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for about 45 minutes, or until the rice is tender and the liquid is absorbed.
  2. While the rice is cooking, prepare the black bean mixture. In a large skillet over medium heat, add a drizzle of olive oil. Sauté the red onion until translucent, about 5 minutes.
  3. Add the diced red bell pepper, corn, cumin, smoked paprika, salt, and pepper. Cook for an additional 5-7 minutes until the vegetables are tender.
  4. Stir in the black beans and heat through. Remove from heat and set aside.
  5. For the avocado lime dressing, blend the avocado, lime juice, olive oil, and a pinch of salt in a small bowl until smooth and creamy.
  6. Once the brown rice is cooked, fluff it with a fork and divide it into serving bowls.
  7. Top the rice with the black bean mixture and drizzle with the avocado lime dressing. Garnish with fresh cilantro before serving.
