Ingredients:

  • 1 cup cooked brown rice
  • 1 can black beans, rinsed and drained
  • 1 red bell pepper, diced
  • 1 zucchini, diced
  • 1 cup corn (fresh or frozen)
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Juice of 1 lime
  • Fresh cilantro, chopped for garnish
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions:

  1. Preheat your oven to 425°F (220°C).
  2. On a baking sheet, toss the diced red bell pepper, zucchini, and corn with olive oil, cumin, smoked paprika, garlic powder, onion powder, salt, and pepper.
  3. Spread the vegetables in a single layer and roast for about 20 minutes, or until they are tender and slightly caramelized.
  4. In a bowl, combine the cooked brown rice and black beans. Squeeze lime juice over the mixture and stir to combine.
