Ingredients:

  • 1 can black beans, drained and rinsed
  • 1/2 cup cornmeal
  • 1/4 cup nutritional yeast
  • 1 teaspoon baking powder
  • 1/2 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/2 cup unsweetened almond milk (or any plant-based milk)
  • 1 tablespoon olive oil
  • 1 ripe avocado
  • 2 tablespoons lime juice
  • 1/4 cup fresh cilantro, chopped
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, mash the black beans until mostly smooth, leaving some chunks for texture.
  2. Add the cornmeal, nutritional yeast, baking powder, cumin, garlic powder, and salt to the mashed beans and mix well.
  3. In a separate bowl, whisk together the almond milk and olive oil, then stir into the black bean mixture until just combined.
  4. Preheat your waffle iron according to manufacturer instructions. Lightly grease with cooking spray or olive oil.
  5. Pour an appropriate amount of batter into the waffle iron and cook until golden brown and crispy, about 5-7 minutes. Repeat with the remaining batter.
  6. While the waffles are cooking, prepare the avocado cream by blending the avocado, lime juice, cilantro, and a pinch of salt and pepper until smooth.
  7. Serve the waffles hot, topped with the avocado cream and additional cilantro if desired.
