Ingredients:

  • 1 can black beans, drained and rinsed
  • 12 wonton wraps
  • 2 tablespoons light soy sauce
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

  1. In a mixing bowl, mash the black beans slightly with a fork, leaving some whole for texture.
  2. Add the light soy sauce, chopped parsley, salt, and pepper to the mashed beans. Mix well to combine.
  3. Place a wonton wrap on a clean surface. Spoon about 1 tablespoon of the black bean mixture into the center of the wrap.
  4. Moisten the edges of the wonton wrap with a little water. Fold the wrap over to form a triangle, pressing the edges to seal tightly.
  5. Heat olive oil in a skillet over medium heat. Once hot, add the wontons in batches, frying until they are golden brown and crispy on both sides, about 2-3 minutes per side.
  6. Remove the wontons from the skillet and drain on paper towels. Serve warm.
