Ingredients:

  • 2 cups fresh blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon cornstarch
  • 1 cup all-purpose flour
  • 1/4 cup brown sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, cold and cubed
  • 1/2 cup buttermilk
  • 1 tablespoon fresh thyme leaves

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the blueberries, granulated sugar, lemon juice, lemon zest, ground cinnamon, and cornstarch. Toss gently to combine and set aside to let the blueberries release their juices.
  3. In another bowl, whisk together the flour, brown sugar, baking powder, baking soda, and salt.
  4. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  5. Stir in the buttermilk and fresh thyme until just combined. Do not overmix.
  6. Pour the blueberry mixture into a greased 8-inch baking dish. Drop spoonfuls of the biscuit mixture over the blueberries, leaving some gaps for the filling to bubble up.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the blueberries are bubbling.
