Ingredients:

  • 1 ½ cups all-purpose flour
  • ½ cup unsalted butter, softened
  • ¼ cup powdered sugar
  • 1 large egg yolk
  • 1 tablespoon cold water
  • 1 cup fresh blueberries
  • ½ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 cup water
  • 2 tablespoons lemon juice
  • Zest of 1 lemon
  • 1 tablespoon butter
  • Powdered sugar for dusting

Instructions:

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine the flour and powdered sugar. Cut in the butter until the mixture resembles coarse crumbs.
  3. Stir in the egg yolk and cold water until the dough comes together. Press the dough into a tart pan evenly across the bottom and up the sides.
  4. Prick the bottom of the crust with a fork and bake for 15-20 minutes or until lightly golden. Let it cool.
  5. In a saucepan, combine the blueberries, granulated sugar, cornstarch, and water. Cook over medium heat until the mixture thickens and starts to bubble.
  6. Remove from heat and stir in the lemon juice, lemon zest, and butter until smooth.
  7. Pour the blueberry mixture into the cooled tart shell, spreading it evenly.
  8. Chill in the refrigerator for at least 2 hours before serving.
  9. Dust with powdered sugar before serving and enjoy!
