Ingredients:

  • 8 medium-sized squid, cleaned
  • 1 cup Ez cheese, shredded
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup breadcrumbs
  • 2 cloves garlic, minced
  • 1 lemon, zested and juiced
  • Salt and pepper to taste
  • Olive oil for drizzling
  • 1/2 teaspoon red pepper flakes (optional)

Instructions:

  1. In a bowl, combine the Ez cheese, parsley, breadcrumbs, garlic, lemon zest, lemon juice, salt, and pepper. Mix until well combined.
  2. Carefully stuff each cleaned squid with the cheese mixture, leaving a little space at the top to prevent bursting during cooking.
  3. Bring a large pot of salted water to a boil. Once boiling, gently add the stuffed squid and cook for 3-5 minutes until the squid is cooked through and tender.
  4. Remove the squid from the water and let them cool slightly before slicing them into rings.
  5. Drizzle with olive oil and sprinkle with red pepper flakes if using. Serve warm.
