Ingredients:

  • 4 cups of diced watermelon (seedless)
  • 2 cups of Brussels sprouts, halved
  • 1 large onion, diced
  • 2 cloves of garlic, minced
  • 4 cups vegetable broth
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme (or 1/2 teaspoon dried thyme)
  • 1 tablespoon lemon juice
  • Optional: red pepper flakes for heat

Instructions:

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and continue to sauté for another minute until fragrant.
  3. Stir in the halved Brussels sprouts, salt, and black pepper. Sauté for about 5 minutes until the Brussels sprouts start to soften.
  4. Pour in the vegetable broth and bring to a boil. Once boiling, reduce the heat and add the diced watermelon.
  5. Simmer the stew for about 15 minutes, allowing the flavors to meld together. If desired, add red pepper flakes for a touch of heat.
  6. Stir in the fresh thyme and lemon juice before serving. Adjust seasoning if needed.
