Ingredients:

  • 2 cups mixed fresh fruits (e.g., apples, pears, peaches, diced)
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter, melted
  • 1 tablespoon lemon juice
  • 1/4 cup chopped nuts (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, mix together the flour, brown sugar, granulated sugar, baking powder, salt, and cinnamon.
  3. In another bowl, whisk together the milk, egg, vanilla extract, melted butter, and lemon juice.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Gently fold in the diced mixed fruits and nuts (if using).
  6. Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
  7. Bake for 20-25 minutes, or until a toothpick inserted comes out clean.
  8. While the fruit balls are baking, prepare the brown sugar glaze by melting 1/4 cup brown sugar and 2 tablespoons of water in a small saucepan over medium heat until it becomes syrupy.
  9. Remove the muffin tin from the oven and drizzle the warm brown sugar glaze over each fruit ball.
  10. Allow to cool slightly before serving.
