Ingredients:

  • 1 large head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 cup water
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup Buffalo sauce
  • 2 tablespoons olive oil
  • 1/2 cup crumbled blue cheese
  • 1/2 cup plain Greek yogurt
  • 1 tablespoon lemon juice
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • Celery sticks for serving

Instructions:

  1. Preheat the oven to 450°F (230°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, whisk together flour, water, garlic powder, onion powder, smoked paprika, salt, and black pepper to create a batter.
  3. Dip each cauliflower floret into the batter, allowing excess to drip off, and place on the prepared baking sheet.
  4. Bake for 25-30 minutes until the cauliflower is tender and golden brown, flipping halfway through.
  5. While the cauliflower is baking, prepare the blue cheese dip by mixing the crumbled blue cheese, Greek yogurt, lemon juice, and seasonings in a bowl. Adjust seasoning to taste.
  6. Once the cauliflower is done, remove from the oven and toss with Buffalo sauce and olive oil until well coated.
  7. Return the coated cauliflower to the oven and bake for an additional 10 minutes.
  8. Serve hot with the blue cheese dip and celery sticks on the side.
