Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1/2 cup milk
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup vanilla buttercream frosting
  • 1/2 cup mini marshmallows
  • 1/4 cup shredded coconut
  • Pink edible glitter or pink sprinkles (for decoration)

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition. Then stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture, alternating with the milk until just combined.
  6. Divide the batter evenly among the cupcake liners, filling each about two-thirds full.
  7. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
  8. Once cooled, frost each cupcake generously with vanilla buttercream frosting.
  9. To create the bunny tails, place 3 mini marshmallows in the center of each frosted cupcake. Roll the marshmallows in shredded coconut to give them a fluffy appearance.
  10. Sprinkle a little pink edible glitter or pink sprinkles around the marshmallows to enhance the bunny tail look.
