Ingredients:

  • 2 large lemons
  • 1 cup granulated sugar
  • 1 cup water
  • 4 oz dark chocolate (70% cacao or higher)
  • Sea salt (for garnish, optional)

Instructions:

  1. Wash the lemons thoroughly and cut them into thin strips, removing any seeds.
  2. In a saucepan, combine the water and sugar, and bring to a simmer over medium heat, stirring until the sugar dissolves.
  3. Add the lemon peel strips to the sugar syrup and simmer gently for about 45 minutes, or until the peels are translucent.
  4. Using a slotted spoon, remove the lemon peels from the syrup and place them on a wire rack to cool and dry for about 1 hour.
  5. Once the peels are dry, melt the dark chocolate in a heatproof bowl over simmering water (double boiler method) or in the microwave in 30-second intervals, stirring until smooth.
  6. Dip each candied lemon peel halfway into the melted chocolate, allowing the excess to drip off. Place them back on the wire rack.
  7. If desired, sprinkle a tiny pinch of sea salt over the chocolate before it sets.
