Ingredients:

  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/2 teaspoon salt
  • 1/2 cup whole milk, warmed
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 cup cooked sweet potatoes, mashed
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 cup brown sugar, packed
  • 1 tablespoon unsalted butter, softened (for filling)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)

Instructions:

  1. In a mixing bowl, combine the flour, granulated sugar, yeast, and salt.
  2. In a separate bowl, mix the warm milk, melted butter, and egg until well combined.
  3. Add the wet ingredients to the dry ingredients and mix until a dough forms. Knead for about 5-7 minutes until smooth.
  4. Place the dough in a greased bowl, cover with a cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.
  5. In a bowl, combine the mashed sweet potatoes, brown sugar, cinnamon, nutmeg, and softened butter to create the filling.
  6. Once the dough has risen, roll it out on a floured surface into a rectangle about 1/4 inch thick.
  7. Spread the sweet potato filling evenly over the dough, then roll it tightly from the long side.
  8. Cut the rolled dough into 12 equal pieces and place them in a greased baking dish.
  9. Cover the rolls and let them rise for another 30 minutes.
  10. Preheat the oven to 350°F (175°C), and bake the rolls for 25-30 minutes, or until golden brown.
  11. While the rolls are baking, prepare the glaze by whisking together the powdered sugar, milk, and vanilla extract until smooth.
  12. Once baked, drizzle the glaze over the warm rolls and serve.
