Ingredients:

  • 1 cup jasmine rice
  • 8 cups chicken broth or water
  • 1 cup cooked shredded chicken
  • 2 inches ginger, sliced
  • 2 green onions (scallions), finely chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt to taste
  • White pepper to taste
  • Chopped cilantro for garnish (optional)
  • Peanuts for garnish (optional)

Instructions:

  1. Rinse the jasmine rice under cold water until the water runs clear, then drain.
  2. In a large pot, combine the rinsed rice, chicken broth (or water), and sliced ginger. Bring to a boil over medium-high heat.
  3. Reduce the heat to low, cover, and simmer for about 1 to 1.5 hours, stirring occasionally, until the rice breaks down and the congee reaches a creamy consistency.
  4. Remove the ginger slices and stir in the shredded chicken, soy sauce, sesame oil, salt, and white pepper. Cook for an additional 5 minutes to heat through.
  5. Ladle the congee into bowls and top with chopped scallions, cilantro, and peanuts if desired.
