Ingredients:

  • 1/2 cup popcorn kernels
  • 1 cup granulated sugar
  • 1/4 cup unsalted butter
  • 1/4 cup corn syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1/2 cup candyfloss (cotton candy) flavoring
  • 1 tablespoon vegetable oil

Instructions:

  1. Pop the popcorn kernels using an air popper or on the stove with vegetable oil until fully popped. Set aside in a large bowl.
  2. In a saucepan over medium heat, combine sugar, butter, corn syrup, and salt. Stir until the mixture starts to boil.
  3. Let the caramel boil without stirring for about 4–5 minutes until it reaches a golden amber color.
  4. Remove from heat and quickly stir in baking soda and vanilla extract. The mixture will bubble up.
  5. Pour the caramel over the popped popcorn and gently stir to coat all the popcorn evenly.
  6. Spread the caramel popcorn on a baking sheet lined with parchment paper and allow it to cool completely.
  7. Once cooled, melt the candyfloss flavoring in a microwave-safe bowl, heating in short bursts until smooth.
  8. Drizzle the melted candyfloss over the cooled caramel popcorn. Allow to set before serving.
