Ingredients:

  • 1 1/2 cups all-purpose flour
  • 1/4 teaspoon salt
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, cold and cubed
  • 3 to 4 tablespoons ice water
  • 3 large apples, peeled, cored, and sliced
  • 1 tablespoon lemon juice
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup brown sugar
  • 1 tablespoon bourbon (optional)
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon coarse sugar (for topping)

Instructions:

  1. In a mixing bowl, combine flour, salt, and granulated sugar. Add cold butter and mix until the mixture resembles coarse crumbs.
  2. Add ice water, one tablespoon at a time, mixing until the dough comes together. Form into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  3. Preheat the oven to 375°F (190°C).
  4. In another bowl, toss the sliced apples with lemon juice, cinnamon, nutmeg, brown sugar, and bourbon (if using). Allow to sit for 10 minutes.
  5. On a floured surface, roll out the dough into a rough circle, about 1/8 inch thick. Transfer to a parchment-lined baking sheet.
  6. Arrange the apple mixture in the center of the dough, leaving a 2-inch border. Fold the edges of the dough over the apples, pleating as necessary.
  7. Brush the crust with the beaten egg and sprinkle the coarse sugar on top.
  8. Bake for 35-40 minutes, or until the apples are tender and the crust is golden brown. Let cool for a few minutes before slicing.
