Ingredients:

  • 1 cup arborio rice
  • 4 cups whole milk (or almond milk for a dairy-free version)
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cardamom
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt
  • 1/4 cup raisins (optional)
  • Chopped pistachios or almonds for garnish

Instructions:

  1. In a large saucepan, combine the rice, milk, sugar, salt, and spices (cardamom, cinnamon, ginger).
  2. Bring the mixture to a boil over medium heat, stirring frequently to prevent the rice from sticking.
  3. Once boiling, reduce the heat to low and simmer, uncovered, for about 30-40 minutes, stirring occasionally, until the rice is tender and the mixture has thickened.
  4. If using, stir in the raisins during the last 10 minutes of cooking.
  5. Remove from heat and stir in the vanilla extract.
  6. Serve warm or chilled, garnished with chopped pistachios or almonds.
