Ingredients:

  • 2 large potatoes, thinly sliced
  • 1 pound minced beef
  • 1 cup cheese (cheddar or your choice), shredded
  • 1 cup tomato juice
  • 1 cup cooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, sautéing until translucent.
  3. Add the minced beef to the skillet and cook until browned. Season with salt, pepper, and Italian seasoning.
  4. In a greased 9x13 inch casserole dish, layer half of the sliced potatoes at the bottom.
  5. Spread the cooked rice evenly over the potatoes.
  6. Layer the cooked minced beef mixture over the rice.
  7. Pour half of the tomato juice over the beef layer.
  8. Sprinkle half of the shredded cheese on top.
  9. Repeat the layers with the remaining potatoes, the rest of the tomato juice, and finish with the remaining cheese on top.
  10. Cover the casserole with aluminum foil and bake for 30 minutes.
  11. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
  12. Let it cool for a few minutes before serving.
