Ingredients:

  • 4 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1 lb baby potatoes, halved
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine the baby potatoes with olive oil, salt, pepper, and paprika. Toss to coat evenly.
  3. Spread the seasoned potatoes on a baking sheet and roast in the preheated oven for 20 minutes.
  4. While the potatoes are roasting, season the chicken breasts with salt, pepper, and thyme.
  5. In a skillet over medium heat, melt a little butter or oil and sear the chicken breasts for about 3-4 minutes on each side until golden brown.
  6. In a separate bowl, mix the heavy cream, minced garlic, and half of the shredded cheese.
  7. After the potatoes have roasted for 20 minutes, remove the baking sheet from the oven and push the potatoes to one side. Place the seared chicken breasts on the other side.
  8. Pour the creamy garlic cheese mixture over the chicken and add the broccoli florets on top.
  9. Sprinkle the remaining cheese over everything.
  10. Return the baking sheet to the oven and bake for an additional 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly and golden.
  11. Serve hot, garnished with fresh herbs if desired.
