Ingredients:

  • 1 cup rolled oats
  • 1/2 cup chia seeds
  • 1/2 cup walnuts, chopped
  • 1/2 cup peanut butter
  • 1/2 cup honey
  • 1 cup dates, pitted and chopped
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions:

  1. Preheat the oven to 350°F (175°C) and line an 8x8 inch baking pan with parchment paper.
  2. In a large mixing bowl, combine the rolled oats, chia seeds, walnuts, and salt.
  3. In a separate bowl, mix together the peanut butter, honey, chopped dates, and vanilla extract until smooth.
  4. Pour the peanut butter mixture into the dry ingredients and stir until fully combined.
  5. Transfer the mixture to the prepared baking pan and press it down firmly into an even layer.
  6. Bake for 20-25 minutes or until the edges are slightly golden.
  7. Allow to cool completely in the pan before cutting into bars. Store in an airtight container.
