Chicken Biryani

Ingredients:

  • 2 cups basmati rice
  • 500 grams chicken, cut into pieces
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 4 cloves garlic, minced
  • 1 inch ginger, grated
  • 1/2 cup plain yogurt
  • 2-3 green chilies, slit
  • 1/4 cup fresh mint leaves, chopped
  • 1/4 cup fresh cilantro leaves, chopped
  • 1/4 teaspoon saffron strands
  • 3-4 whole cloves
  • 3-4 green cardamom pods
  • 1-2 cinnamon sticks
  • 1 bay leaf
  • 1 teaspoon cumin seeds
  • Salt to taste
  • 4 cups water
  • 2 tablespoons ghee or vegetable oil

Instructions:

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a large bowl, mix the chicken pieces with yogurt, garlic, ginger, green chilies, and salt. Marinate for at least 30 minutes.
  3. In a heavy pot, heat ghee or oil over medium heat. Add sliced onions and sauté until golden brown.
  4. Add the marinated chicken to the pot and cook until the chicken is no longer pink.
  5. Stir in chopped tomatoes, cumin seeds, cloves, cardamom, cinnamon, and bay leaf. Cook until the tomatoes are soft.
  6. Add the drained rice to the pot and gently mix with the chicken and spices.
  7. In a separate bowl, warm the water and dissolve saffron strands in it. Pour the saffron water over the rice.
  8. Add remaining water, mint, and cilantro. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until the rice is cooked and has absorbed the water.
  9. Fluff the biryani gently with a fork and let it rest for 5 minutes before serving.
