Chicken Biryani

Ingredients:

  • 2 cups basmati rice
  • 500 grams chicken, cut into pieces
  • 1 large onion, thinly sliced
  • 2 tomatoes, chopped
  • 1/2 cup plain yogurt
  • 3 cloves garlic, minced
  • 1-inch piece ginger, grated
  • 2 green chilies, slit
  • 1/4 cup chopped fresh coriander leaves
  • 1/4 cup chopped mint leaves
  • 1/4 teaspoon saffron strands soaked in 2 tablespoons warm milk
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/4 teaspoon turmeric powder
  • 4-5 whole cloves
  • 2-3 green cardamom pods
  • 1-2 bay leaves
  • 4 cups water
  • Salt to taste
  • 3 tablespoons cooking oil or ghee

Instructions:

  1. Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain.
  2. In a large bowl, marinate the chicken pieces with yogurt, garlic, ginger, turmeric, coriander powder, garam masala, and salt. Let it marinate for at least 30 minutes.
  3. In a heavy-bottomed pot, heat the oil or ghee over medium heat. Add cumin seeds, cloves, cardamom, and bay leaves. Sauté for a minute until fragrant.
  4. Add the sliced onions and sauté until golden brown. Then add the green chilies and chopped tomatoes. Cook until the tomatoes soften.
  5. Add the marinated chicken to the pot and cook until the chicken is browned and cooked through, about 10-15 minutes.
  6. In a separate pot, bring 4 cups of water to a boil. Add the soaked and drained rice, along with salt to taste. Cook until the rice is 70% cooked, then drain the excess water.
  7. Layer the partially cooked rice over the chicken in the pot. Drizzle the saffron milk over the rice, and sprinkle coriander and mint leaves on top.
  8. Cover the pot tightly with a lid and cook on low heat for about 20-25 minutes, allowing the flavors to meld and the rice to finish cooking.
  9. Remove from heat, let it sit for 5 minutes, then gently fluff the biryani before serving.
