Ingredients:

  • 1 lb chicken breast, sliced
  • 2 cups cooked brown rice
  • 1 cup bell peppers, sliced (red, yellow, and green)
  • 1 cup broccoli florets
  • 1 carrot, julienned
  • 3 cloves garlic, minced
  • 1 inch fresh ginger, grated
  • 3 tablespoons soy sauce (low sodium)
  • 1 tablespoon sesame oil
  • 2 tablespoons vegetable oil
  • 1 tablespoon honey (optional)
  • Salt and pepper to taste
  • Green onions, sliced for garnish
  • Sesame seeds for garnish

Instructions:

  1. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the sliced chicken breast and season with salt and pepper. Stir-fry until the chicken is cooked through, about 5-7 minutes.
  3. Add the minced garlic and grated ginger to the skillet, cooking for an additional minute until fragrant.
  4. Stir in the bell peppers, broccoli, and carrot, and cook for another 3-4 minutes until the vegetables are tender-crisp.
  5. Add the cooked brown rice to the skillet, along with the soy sauce, sesame oil, and honey (if using). Stir well to combine all ingredients and heat through for about 2-3 minutes.
  6. Remove from heat and garnish with sliced green onions and sesame seeds before serving.
