Ingredients:

  • 2 cups shredded cooked chicken
  • 4 large eggs
  • 1 cup bean sprouts
  • 1/2 cup chopped green onions
  • 1/2 cup diced bell peppers (red or green)
  • 1/4 cup soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon ginger powder
  • Vegetable oil for frying

Instructions:

  1. In a large bowl, whisk together the eggs, soy sauce, oyster sauce, sesame oil, black pepper, garlic powder, and ginger powder until well combined.
  2. Add the shredded chicken, bean sprouts, green onions, and bell peppers to the egg mixture. Stir until everything is evenly combined.
  3. Heat a non-stick skillet over medium heat and add a tablespoon of vegetable oil. Once hot, pour in a ladleful of the egg mixture, spreading it out to form a round pancake.
  4. Cook for 3-4 minutes on one side until golden brown, then carefully flip and cook for another 2-3 minutes on the other side. Remove and keep warm.
  5. Repeat the process with the remaining egg mixture, adding more oil to the skillet as needed.
  6. Serve hot with additional soy sauce or your favorite dipping sauce.
